The Soleras of our Very Old Sherries were established towards the end of the 19th Century. Each individually registered bottle of the "Valdespino V.O.S. Collection" represents over 100 years of careful selection by generations of expert oenologists. The result is a Sherry unique in character, intensity and complexity. The grapes come from the chalky soils of the famous Pago Carrascal vineyards which are noted for Oloroso. The must is fermented in stainless steel and the wine leaves the solera with an average age of over 25 years. This Oloroso is mahogany to amber in colour with a delightful nose of nuts, vanilla and even a trace of marmalade. On the palate it is rich, elegant and beautifully balanced with just a trace of sweetness.
