Sourced from 15-45 year old vines in Macedonia, Thessaly Thrace region
Winemaking: Careful grape sorting followed by fermentation in stainless steel tanks, old open-top barrels, and concrete vessels with short cold maceration
Aging: 9 months on fine lees in old barrels, concrete tanks, and stainless steel with no new oak to preserve fruit character.
