My favorite rose in the entire range, the very limited Caroline is a special bottling of old vine parcels from Cibonne planted in schist soils with some clay top soils. It also sees the smallest barrels at 300L, bigger than a standard 225L barrel and also mostly used oak. They introduce small single digits of new oak each vintage that is completely unnoticeable. - Tom

Caroline is a limited cuvée named for Claude and Brigitte’s daughter, a selection made exclusively of specific plots from the estate’s over 40-year-old organic tibouren grapes planted on calcareous clay and schist and fermented in 300L barrels. Like the other Cibonne Cuvées, Caroline has the structure to improve in bottle for up to a decade or more.
