Our tasting note: Deeper ruby in the glass.  Pronounced with aromas of fresh cherry, raspberry, crushed blackcurrant, and a touch of dried flowers with a little oak from the barrique aging. The palate is medium-bodied and supple, with juicy red fruit, fine tannins, and a gentle note of baking spice. Fresh and inviting through the finish.

• Grape: 100% Pinot Noir
• Vineyards: Flint (silex) soils. The estate manages yields through green harvesting and sorts the fruit in the vineyard before hand-harvesting.
• Winemaking: The grapes are sorted again at the winery and destemmed. A four-day cold maceration is followed by approximately 15 days to three weeks of maceration, with gentle pumpovers twice daily and rack-and-return if needed. Malolactic fermentation takes place in 300-liter barrels.
• Aging: 12–15 months in 300-liter barrels.
• Pairing suggestions: Charcuterie, grilled pork sausages, and aged French cheeses.

The vineyard and cellar details above follow the producer’s Évidence Rouge technical sheet. It does not specify vine age, indigenous yeasts, or the age of the barrels, so I’ve left those out.
