Composed of 45% Grenache, 30% Mourvèdre, 20% Merlot, and 5% Cinsault, this wine comes from the historic vineyard of the Carmelite monastery located five kilometers from Palette. It is crafted using the same meticulous methods as the estate’s Palette rosé: partial whole-cluster fermentation, élevage in barrique and 12-hectoliter foudre, no malolactic conversion, and extended aging on the lees. Rather than a second wine, the Rougiers view this Vin de Pays as an expression of a distinct terroir with equal standing and character.
