Grape: 100% Xinomavro
Soils: Schist and granite.
Vineyard: Single, ungrafted parcel of Xinomavro, planted 54 years ago in Fytia, organically cultivated, expressing the uniqueness of the terroir. High altitude around the village of Fytia ensures lower average temperatures. Big diurnal range during the ripening season and constant circulation of air from Vermio mountain bring freshness and elegance to the wine. Planted at 450–650 meters.
Winemaking: The grapes were fermented with 20% whole clusters and indigenous yeasts. Maceration on skins for 40 days, resulting inincreased structure, complexity, and aromatics. Aged for 24 months in oak, with 50% in 2,000Lt foudres and 50% in 500Lt oak barrels.
ABV: 13.5%
