Gismondi on Wine (88): Oenops was founded in 2015 by winemaker Nikos Karatzas, with a focus on indigenous and rare grape varieties grown on profound terroir. He selects organically grown cool climate sites and old vine plots, from vineyards in Drama and Macedonia. As you may have guessed from the name, this is a raw version of xinomavro, with lowest intervention (native ferment, no SO2, unfiltered), fermented in amphora, where it remained aging for 6 months. This hazy brown / crimson hued wine streams muddled cherry, crushed plum with a lift of spritz. Acidity is slight, as are the fine tannins, pulling with a sticky resistance, through allowing the fine texture of the amphora to shine. Enjoy this naked view of the ancient grape with a slight chill.
