Vinification and Elevage: Created with 100% Assyrtiko, whole bunch pressed, and fermented in steel tanks. After fermentation is complete, the wine remains on the lees for 7 months.
Color: Lemon yellow
Nose: Aromas of flint, wet stone and sea iodine combined with ripe yellow fruits, peaches and honey, with notes of bread give high complexity.
Taste: High and crispy acidity integrated into the rich body. The creamy texture is combined with the mineral, saline and ripe fruit character. The long finish adds depth to the wine.
Pairing Suggestions: Perfect paired with seafood and fish cooked in any style (grilled, fried or steamed).

The king of Greek grapes, Assyrtiko is not only one of the country’s most noble grapes, but also one of the most versatile capable of producing bone dry to lusciously sweet wines and everything in between. The best Assyrtikos are born when skilled masters tame the grape’s ferocious levels of acidity while still managing to show off its volcanic character. At Vassaltis, we believe the key lies not just in our vines, many of which have withstood Santorini’s forceful winds for more than 60 years, but in how we treat the grapes in our winery.
The Santorini is our signature expression of Assyrtiko and, as the first wine ever created by Vassaltis, holds a special place in our wine line up. This is the wine that shows the true essence of what the island and Assyrtiko are about. Created with 100% Assyrtiko hand-harvested from across our vineyards in Imerovigli, Vourvoulos, and Megalochori, we press whole bunch grapes and ferment in steel tanks then let the wine rest on the fine lees for 7 months. The resulting wine offers aromas of basalt and pumice stone mingled with ripe tropical fruits, honeysuckle, and sea spray while the palate displays salty green fruits with high levels of minerality and acidity with a deep streak of citrus on the lingering finish.
