The Aube excels at Pinot Noir, but THIS is what the AUBE does that is its most UNIQUE and SPECIAL wine - PINOT BLANC! This is THE signature wine of Piollot!
This wine comes from the parcel named Val Colas Robin. Roland’s father, Robert Piollot, cleared and planted this vineyard using the selection massale method in 1955. At this time, the majority of other growers were ripping up Pinot Blanc in favor of Chardonnay and Pinot Noir, but Robert always cared for the favorite local grape. Colas Robin is aged 80% in steel tanks and 20% in barrels, then kept on the lees for five years before release. Like all of the Champagnes from Piollot, the wine is disgorged non-dosé.

Tasting Note: A rare and captivating expression of Pinot Blanc, the 2018 Colas Robin showcases the variety's singular combination of generosity and finesse. Aromas of ripe pear, yellow apple, white peach, and acacia blossom are accented by notes of almond, honeycomb, and crushed chalk. The palate is textured yet vibrant, with a gentle creaminess from extended lees aging balanced by bright acidity and a saline mineral core. Bottled without dosage, it finishes long, dry, and remarkably pure, revealing both the richness of the warm vintage and the precision of Piollot's biodynamically farmed vineyards.
