Stéphane Regnault’s Dorien N°80 is a Grand Cru Blanc de Blancs Champagne crafted entirely from Chardonnay grapes cultivated in the prestigious Oger region. This wine exudes bright citrus, white flowers, and a chalky minerality, rounded off by a creamy mousse and vibrant, saline finish. It reflects Stéphane's dedication to expressing terroir through biodynamic practices.
Composition: 100% Chardonnay from Oger’s Chemin de Flavigny vineyard. Vine age ranges from 40 to 60 years, planted on chalky soils.
Winemaking: Fermentation in a combination of stainless steel and used barrels, with malolactic fermentation occurring naturally.
Aging: The wine ages for about 5 years on lees, with reserve wines aged in solera since 2010. Disgorged with a low dosage of approximately 2 g/L.
