Jean Vesselle's "Oeil de Perdrix" Brut is a distinguished Champagne that embodies the rich traditions of winemaking in Bouzy, a village renowned for its exceptional vineyards. This non-vintage brut offers a refined bouquet of aromas, characterized by subtle notes of red fruits and delicate floral hints, capturing the essence of the region's unique terroir.
Composition: Predominantly Pinot Noir with a touch of Chardonnay. Vine age varies with a mix of clay and limestone soil.
Winemaking: Traditional method with controlled fermentation to preserve the grape's natural characteristics.
Aging: Aged on lees for a minimum of 18 months to enhance complexity and depth of flavor.
Falstaff (91): Light copper gold, silver reflections, delicate, lively mousse. Red berry fruit with a hint of honey, delicate notes of preserved cherry, fresh orange zest. Medium body, white apple, some pear, fresh structure, mineral and persistent, subtle sweetness on the finish, versatile.
