The elegant, floral and subtle 2021 Finca Capeliños comes from a southwest-facing centenary vineyard at 350 to 400 meters in altitude on granite and schist soils planted with some 70% Mencía and the rest a lot of local grapes. It fermented with 60% full clusters and had 30 days of maceration but with a very soft vinification, and it matured in used 225-liter French oak barrels. Somehow, the small barrels have given the wine restraint this year, with great elegance and nuance, floral, perfumed and subtle with a fragile balance in the palate, where the wine has some ethereal characteristics. Only 1,000 bottles were filled in May 2023.

Guímaro doesn't stop experimenting; they showed me three new wines this year, and they are testing granite eggs and doing some trials with fortified wines with the help of Niepoort. They have 16 hectares of vineyards and control a further 26 across Ribeira Sacra. They produce around 200,000 bottles, divided in 11 different labels.

I tasted wines mostly from 2021 and 2022. 2021 could be considered a classical vintage; it was harvested between the 13th of September and 10th of October, the dates that were normal 15 or 20 years ago. Yields were good but the weather was challenging, with constant rain and cooler temperatures. The wines have a very fresh profile. 2022 was very warm in other regions, but they consider it very good for them, with the harvest taking place between the 13th of September and third of October. They had enough rain, the weather was not as extreme as in other regions and they achieved wines with a lot of freshness but with more structure than in 2021.

From a single 0.60 ha plot -facing south-west - of 100+ year old vines, located down on the slope at 350-400 meters, old school vinification with foot-treading, partial whole cluster fermentation (50%) in open top foudre, long maceration on the skins and stems, and aging 12 months in old French 225L barrique and 500L foudre.  Capeliños exhibits classic Ribeira Sacra traits of bramble fruits, rose petals, and deep spicy qualities woven into a beautifully structured and elegant wine to pair with wild game, offal, braises, stews, roasted or grilled meats.
