The 2022 DD was produced with destemmed Trousseau and Poulsard grapes with three months of maceration and full-cluster Pinot Noir grapes with one month of maceration. This is their more approachable red, bright and fun, with notes of rose hip, hibiscus, watermelon and bright red berries. It's a nice, easy red wine to drink. It finishes with notes of herbs and abundant fine tannins, slightly dusty. Better with food.
Grapes: 40% Poulsard, 40% Trousseau, 20% Pinot Noir – 35 years-old-vines
Viticulture: 9 acres single south-west facing plot made of limestone rock slide from the Bajocien era over a marl subsoil from the Trias.
Winemaking: Poulsard and Trousseau are destemmed. Whole cluster for the Pinot Noir. Maceration of all 3 varieties in a century old wooden vat for 3 month with no addition of SO2. Wine made the same way than André (or DD), Stéphane’s dad, would do following the ancient practices. Devatting in December after harvest, bottled in February 2019 with no addition of SO2.
