This light, sprightly blend is a lot like the famous castles of the Loire: exceptionally pretty, surprisingly complex. It mellows the crisp refreshingness of Sauvignon Blanc with a dose of weightier Chardonnay to produce a supple beauty with a lemony, green-apple palate perfectly suited to apple-pear-walnut salad, filet of sole, or chicken piccata.

Vine Age: 15 - 30 years
Soils: Clay, Limestone
VITICULTURE / VINIFICATION
• Harvested by hand
• Grapes are gently pressed
• The must is racked by decanting
• Wines are never chaptalized
• Fermentation occurs naturally with indigenous yeasts in temperature-controlled cuves
• Malolactic fermentation begins in the Spring with the help of the bacteria present in the lees
• Wines age on their lees for 8-10 months in stainless steel cuves before bottling
