Vivid and expressive, with aromas of wild strawberry, red currant, and blood orange layered over rose petal, spice, and a faint smoky nuance. The palate is energetic and structured, with a fine, vinous texture carrying bright red fruit, citrus zest, and a subtle earthy undertone. Dry and precise, it finishes long and savory, with lingering berry fruit, gentle grip, and a touch of mineral tension.
This cuvée is made exclusively from Pinot Meunier , from the Les Beaudiers plot in Chavot. The vines, planted in 1953, 1958 and 1965, thrive on clay-loam soils enriched with small pebbles, schist and flint, with a chalky subsoil from the Sparnacian period. These characteristics give the cuvée a remarkable minerality and freshness.
This is a saignée rosé. After meticulous sorting of the grapes harvested at optimal ripeness, the berries are destemmed. Then begins a 12 to 14-hour maceration. Alcoholic fermentation takes place slowly and spontaneously in barrels, without malolactic fermentation. Aging on fine lees for 6 months, with regular stirring, guarantees a rich and complex texture. The dosage is Extra Brut to bring a beautiful balance to the rich fruit notes brought by the saignée technique.
