Gismondi on Wine (91): Quintessence has always been a blend of the best plots at Pesquié and the flagship wines, but it has recently given up that title to the single vineyard release, although it remains a top blend. It is an 80/20 mix of roussanne and clairette, fermented in concrete, including an egg, but 60% is barrel fermented in 500-600 litre barrels. The aging and blending have been the focus for the last two decades, and you see the work in the weighty but fresh finish. The Roussanne is also fresher and more northern in style than you see around Châteuneuf-du-Pape. It has beautiful salinity and some spice that adds to its complexity—a thoughtful white, producing about 20,000 bottles. (Anthony Gismondi).
