Vinification

Fermentation with natural yeasts in barrel.

Aging

24-36 month extended ageing without racking in a very cold undergroud cellar in a combination of barrels and some Stockinger brand foudres.

Our Note: Medium ruby with garnet hints, showing beautifully evolved Cabernet Franc character. Aromas of dried red fruit, earthy mushroom, tobacco leaf and dried herbs lead to a medium-bodied palate with refined, juicy red cherry and subtle spice. Elegant, vibrant acidity and finely integrated tannins support a long, mineral-tinged finish with savory complexity and gentle herbal notes typical of limestone-driven Loire reds.
