My Tasting Note: A straw and light gold. The pronounced nose rises easily from the glass with primary lemon and lime fruit and peel, green apples, chalk, white florals, ginger, a subtle nutty note, saline and a light yeasty note. The palate is medium bodied, with med+ acidity, a pronounced and electric palate lights up the flavors. The finish is long, racy, clean and energetic! This strikes a compelling balance between tension and texture—light on its feet yet quietly structured. Chalky albariza minerality drives the core, while vibrant acidity frames flavors of citrus, orchard fruit, and a faint nutty, oxidative hint from time under flor.
From three different plots in Miraflores Alto and Miraflores Bajo, one of the most celebrated pagos in Sanlúcar, with 35 to 110 years old Palomino vines planted at 45-65 meters above sea level facing west on three different type of Albariza soils: Lentejuelas, Lustrillo and Tosca Cerrada. Bottled on the early side (usually less than a year after harvest), this cuvee is meant to be ready to drink upon release but please don't hesitate to stash a few bottles away - they age VERY well as I know from personal experience!

Vineyards: Three parcels of 35 –110-year -old vines in the Pago de Miraflores Alta & Baja, at 45 -65 meters
Soil: a mix of Albariza soils: Lentejuelas (up to 80% chalk, with a clay - like texture), Lustrillos (less purely chalky, with iron oxide), and Tosca Cerrada (50 -60% chalk, with a cement -like solidity)

Production: 650 piddly cases
Winemaking: Grapes are harvested by hand then pressed whole - cluster into old botas, where the juice spontaneously ferments without temperature control. The wine finishes fermentation and rests for 9 months in the same botas, developing a veil of flor which lasts for several months .
