The NV Extra Brut Blanc de Blancs Les Rocheforts Premier Cru, picked in Bisseuil in the Marne Valley, offers ripe, creamy flesh of yellow and green apple that is aromatic and expressive on the nose. This green and yellow apple vibe continues through the wine with immense freshness and apple skin aromatics, verging into creamy apple flesh that fuses with salty yeast. A rustic, fresh-faced wine with much fruit benefits from its low dosage and finishes with verve and utter freshness. Dosage is 2 grams per liter. Les Rocheforts translates to 'the strong rocks.' In 2012, Etienne started a separate perpetual reserve just for Les Rocheforts. This 1er cru single-vineyard in Bisseuil sits on pure chalk soils and creates a precise and beautifully expressive Blanc de Blancs (produced with 25% reserve wine). About 50% of the wines see used neutral oak and 50% stainless steel vats. Full malolactic fermentation. Aged on fine lees in bottle 18-24 months before disgorgement.
