The 2021 Les Graviers Chardonnay is always a favorite of mine. It's Chardonnay from a site below La Tour de Curon with lots of limestone that gives the wine the salty and tasty character within the transparent and precise Tissot style, yeasty and with austere minerality. This was still in barrel and will be blended and bottled when they get the 2023 harvest in the cellar.

Tasting Note: The most "Burgundian" of the wines on offer today. Intensely aromatic, floral, very elegant, open, and accessible. Nuances of candied lemon with a hint of concentrated lime. The mouthfeel is exciting and textural, with a crystalline, salty minerality. Medium plus on he palat nd into the long, fresh finish.  Close your eyes and pick a 1er blanc Beaune AOC and you are there!

Grapes: 100% chardonnay from a single vineyard: 'Les Graviers'. Comes from plots with a subsoil of lime marl, pebbles and clay. The vines were planted between 1952 and 2002 on an area of ​​only 1.3 hectares.

Winemaking: The grapes are not destemmed and fermentation in barriques starts spontaneously. The maturation on the yeast cells lasts 16 months in oak barrels, 30% of which are new. The wine rests for another 4 months in steel tanks.
