Château Pajzos, set in the heart of the Tokaji region, is renowned for its exceptional vineyards. The volcanic, rocky soils and unique climate between the Bodrog and Tisza rivers provide the ideal conditions for producing the sweet Aszú wines. The estate, managed by Ronan Laborde, emphasizes a winemaking philosophy that enhances the development of botrytis, essential for Aszú wines, resulting in a rich and concentrated wine.
Composition: Native varietals such as Furmint, Muscat, Hárslevelu, and Zéta, known for their natural acidity and concentration. Volcanic, rocky soils provide the foundation for these vines.
Winemaking: A base dry white wine is made and then mixed with Aszú berries, which are botrytised and shriveled grapes, traditionally picked into wooden tubs called puttony.
Aging: The sweet wines are aged in 1.5km of underground galleries, offering constant humidity and temperature, ensuring the quality of each vintage.
