Domaine Moreau-Naudet Chablis Vaillons 1er 2023
Domaine Moreau-Naudet Chablis Vaillons 1er 2023
92-94 The Wine Advocate
Sourced from 60- to 77-year-old vines in four of this premier cru's climats, including Séchet, Moreau-Naudet’s 2023 Chablis 1er Cru Vaillons is vinified 70% in tank, with the remainder in oak (old 228-liter barrels and a few 600-liter foudres). Opening from the glass with an expressive bouquet of tangerine zest, white flowers, pear and oyster shell, it’s followed by a medium to full-bodied palate with ample chalky extract and a saline finish. It’s broader than Beauregard but simultaneously racier than Montmains. - Reviewed by: Kristaps Karklins
Moreau-Naudet's holdings in Vaillons are around 1.7 hectares of mostly 50-year-old vines. On the left bank of le Serein and on the middle of the slope, Les Vaillons is a particularly well-positioned site that enjoys an excellent reputation thanks to the work of several key growers. The Domaine works with vines in two sub-climats: one called Sécher which is very stony calcareous single block of 4 acres. The other, and another called Roncières, is warmer and provides more opulence. Sécher (usually) accounts for 30% of the blend and provides intense mineral cut and structure. Each parcel is vinified separately before being blended. The wine is aged and fermented in both tank and older barrels.
Winemaking: Slow pressing in a pneumatic press. Long “Debourbage” of 10 hours in order to avoid any useless fining or filtration. Aged 24 months 1/3 in 1 year-old 600 liters French oak barrels and in 400 liters 1 year-old French oak barrels (put in shape by hot water not fire), and 2/3 in thermo-regulated stainless-steel tanks.
