• Traditional fermentation with semi-submerged cap with punch-downs and pump-overs.
• Controlled fermentation temperature at 29°C on indigenous yeasts.
• Total maceration time: 30-35 days.
• Malolactic Fermentation in cement tanks during spring following the harvest.
• Cask aging for 36-42 months in large Slavonian Oak botti of 20-30-50-80-100 hl.
• After bottling, the wine was aged in our cellars for a minimum of 6 months before release.

Prunes and leather, leafy lightness, a touch of orange and an almost grapefruit note are sustained by firm acidity on a large, full, biting palate built for the long haul, filled out with youthful fruit concentration. Outer quote mark Cavallotto’s 2018 Barolo Bricco Boschis is a powerhouse. A blast of sweet dark cherry, menthol, licorice, gravel and incense hits the palate. Youthful and quite strapping in terms of its presence, the 2018 holds quite a bit of promise. That’s the good news. But readers will have to be patient, as the tannins are quite searing at this stage for a wine that has typically been a bit more forthcoming.
