The whole clusters fermented in stainless steel and concrete for five days, and the wine was kept in concrete for eight months. It has a slightly deeper color and a characterful nose with notes of pollen and beeswax, aromatic herbs and some yellow fruit. It comes in at 13% alcohol with a pH of 3.45. It's clean, medium-bodied, tender and balanced, with a caressing mouthfeel and a faint bitter twist in the finish, beautifully textured, which Dominik Huber attributes to the PX. 10,600 bottles produced. He also is planting Garnacha Peluda in the zone of Montsant and studying the soils with the help of Chilean expert Pedro Parra. In 2025, given the dry conditions of the last vintages, he has started a project to irrigate his vineyards. He now works 21 hectares, mostly owned and some with long-term rental agreements. It was one of the earliest harvests ever, starting the second week of August and finishing by mid-September. It didn't rain much until mid-October. In general, yields were low, but their organic and biodynamic vineyards behaved well and delivered more grapes. The wines have a lot of freshness and are fine and elegant with structure and tannins. Compared to other reds from Catalunya, his wines feel distinctly Burgundian in style, yet his interpretations of Montsant and Priorat are very effective. Huber’s wife, Tatjana Peceric, oversees oenology. Stylistically, the duo works with whole clusters and minimal aging. They harvest as early as possible, aiming to reach the lower bound of alcohol content required to maintain DO status (the wines consistently land at the 13.5% minimum). This approach has led to a reputation that runs counter to that of most in the region, especially with the reds, which are light in color and have an enticing vibrancy.
