"This unique wine is more than your standard rosé – it shares the structure of a red wine and the racy tension of a white. The colour is deep, and the aromas exhibit a heady blend of red berries, floral notes, and exotic spices. The texture is lively and perfectly dry, with enough elegant substance to age gracefully (yes, a rosé!). The wine is blended from Pinot Noir and Pinot Beurot (Pinot Gris) from a collection of old vine fruit in Marsannay; half is direct to press and half is macerated to extract more colour. The Fleur de Pinot is made half by direct pressing of the pinot grapes and half skin contact for three days with crushed whole bunches. Very pale pink, very backward at this stage but still showing some fresh orange and lemon zest alongside the fruit. You can sense what an interesting wine this will be, but you know it is barely showing yet. All in finesse though. Drink from 2025-2030. Tasted Nov 2023.

The 2022 Marsannay Fleur de Pinot comes from several parcels meticulously assembled by Laurent Pataille. Around half are directly pressed with a couple of years in demi-muids and tank. The nose offers morello cherries, strawberry pastilles, hints of pressed white flowers, and a light sea spray note. The palate has fine tension and very good weight for a rosé, with bitter cherry perking up the finish. Delicious. - By Neal Martin on November 2023

The titular winemaker was away when I dropped in at their rather cozy cellar in Marsannay, but his brother Laurent, who incidentally makes wine under his own name, was on hand. He guided me through their wide range based around Aligoté, Pataille being the vanguard of the Les Aligoteur movement, not to mention his enticing array of site-specific Marsannay cuvées. Laurent Pataille looks much like his brother with those thick curly locks, initially more taciturn than Sylvain but soon chatting away. These are low-intervention wines with minimal and occasionally no use of sulfur. Many are aged for the first year in wooden foudres before being racked into used barrels. Pataille could not remember the exact picking date, except that harvest started in early September. I found a couple of cuvées just a little too natural for my liking, which set a few alarm bells ringing, while others were exceptionally fine and remain excellent value-for-money to boot. Sylvain has at least two parcels on opposite ends of the vineyard. The vines here are old, the youngest being planted in 1949, and consist of Chardonnay, Aligoté, and Pinot Noir for Rosé. Sylvain notes the characteristic reductive minerality despite the change in location, grape, and bedrock. He believes this minerality is so beautiful that it would be a shame to make red wine on this terroir.
