The organic Cavallotto 2019 Barbera d'Alba Superiore Vigna Cuculo is ripe and opulent with thick layers of dark fruit and blackberry. There is attractive softness here, contrasted against bright acidity. The wine's strongest cards have to do with texture, plumpness and the irresistible drinking style that a cheerful and informal wine like this can bring to the table. Production is 6,720 bottles.
Alfio Cavallotto and his family have farmed organically since 1976. In 2008, they started to reduce the use of copper, finally eliminating it by 2013, thereby cleaning the soils of metal buildup. These are excellent wines from a unique position. Bricco Boschis is located at the center of the Barolo growing region, and it links the eastern part of the appellation (Serralunga d'Alba and Monforte d'Alba) to the western side (where La Morra and Barolo are found).

Vinification: fermented with indigenous yeasts, macerated with submerged cap for 10-15 days.
Ageing: Traditional in Slavonian Oak Casks for 15-18 months.
Bottle Ageing: 6 months before release into the market.
Wine Details: Excellent structure with typical atoms and flavors of Barbera grown in the Barolo zone: red fruits, red flowers, open and intense. excellent aging potential.
Pairing Suggestions: This wine finds its best matches at the table, with first courses of prosciutto, salami, lardo, beef carpaccio “Albese” style and vitello tonnato. Also excellent with pasta and pizza, or with second courses of red meat in general, but also grilled fish or robust white meats, or with aged cheeses.
