My Tasting Note: Medium-minus lemon yellow. The palate on this wine really shined, the nose was a little shy but the action was all on the palate and the finish. The nose was medium with citrus notes, chalky and saline mineral notes. A medium bodied palate, with med/med+ acidity, and med+ flavor intensity with lemon, lime, and mandarin, some kiwi too. Saline and and chalk mineral tones, with hay and lanolin adding further complexity. The finish cascades for a while building into a sneaky long finish.
Grape: Chenin Blanc
Terroir: Limestone calcarious chalky soils near the Thouret river help to moderate the cooler months of the early growing season and warmer ones of summer.
Vinification: Whole cluster pressing of the chenin bunches, the juice is then fermented in stainless steel tanks at cooler temperatures to maintain the freshness of the fruit character. Full malolactic fermentation. Aged on the lees and then bottled.
