Varieties: Syrah 85%, 15% Cabernet Sauvignon
Natural is blend of Cabernet Sauvignon and Syrah with no added sulfites.  The fruit comes from 17-year-old vines at an altitude of 600 meters in the Méntrida region of Spain. Biodynamic agriculture. Indigenous yeasts. Aged in French oak barrels and foudres. Only 3,000 bottles were produced. Alcohol 14.5%.

Winery
Cold pre-maceration for 4 days. Alcoholic fermentation with indigenous yeasts and controlled temperature between 18 and 22 degrees. Selection table. Grapes with stems 30% and destemmed 70%. Macerations of between 20 and 30 days depending on plots and tanks. Gentle extractions by pumping over and delastage.
