Light straw color. A seriously perfumed nose, dense but elegant and full of filigree. Fresh, lemon, lime and grapefruit citrus and zest, a light touch of spring flowers, salinity, oyster shells and chipped rocks, crazy fresh. It reminds me of something between Assyrtiko and Sancerre without the pungent grass. This will be amazing in the summer. The palate is sharp on this one, texturally a lot like Assyrtiko, acidity is high but pleasant. Soft pressing followed by spontaneous fermentation in stainless steel and aged in cement for 6 months.
