Vines are planted in limestone bedrock with a bluish clay marl top soil. Farming is organic.\u003cbr\u003e\u003cstrong\u003eVinification:\u003c\/strong\u003e Hand-harvested, the grapes are then destemmed but not crushed. It ferments spontaneously in whole berries in stainless steel tanks. During maceration, constant punching down and delestage if necessary.
