In contrast to Boréal, the NV Brut Nature Austral is sourced from south-facing vineyards and, in this latest rendition—disgorged in September 2024—derives entirely from the 2022 vintage. It offers evocative aromas of orange zest, pear and honeysuckle. On the palate, it is full-bodied, ample and textural, with a rich core of fruit, ripe yet vibrant acidity and a long, aromatic finish. Originally from Beaune, Benoît Doussot arrived in Champagne in 2015 after a stint at Domaine Fichet in Meursault. He began modestly, purchasing fruit from the equivalent of just 1.5 hectares, but today, operating from his new winery in Landreville, he sources grapes for his Clandestin project from some 14 hectares of organically farmed vineyards cultivated by 14 contracted growers. In sourcing, Doussot is looking for the second terrace of Kimmeridgian limestone on the mid-slope. Each of his cuvées originates from a single vintage and a single grape variety, differentiated by their different expositions.
After pressing at the growers’ facilities, vinification is carried out plot by plot in secondhand 500- and 600-liter Burgundian barrels, undergoing long, spontaneous fermentations with full malolactic conversion. The vins clairs are generally aged for a year on their fine lees before being bottled without dosage.
These are Champagnes with a Burgundian accent, with the more northerly facing sites delivering more chiseled wines and the southerly facing sites more plenitude. In the 2022 vintage, however, the wines also display a certain precocity. Published: Nov 20, 2025
