An intense perfume of earth, fruit and pastry.  Straw, honeycomb, pear overlay a light autolytic nose.  On the palate berry fruit, early season melon, with bright acidity.  A wine of tremendous body and weight.  The oak woodlands of California on a warm summer day.

Varietals:  27% Pinot Noir, 73% Chardonnay
Assemblage: 30% is a perpetual Cuvee, the rest from 2019
Vineyards The primary vineyards are Keefer Ranch, Alder Springs, Linda Vista, and Rorick
Viticulture:  Farmed using sustainable and organic methods
Vinification The grapes were pressed using a traditional Champagne cycle and press cut. The wine proceeded through a native primary and malolactic fermentation in barrel and wooden tanks. No sulfur was used in the élevage. The wine was racked once and tirage bottled without fining or filtering. After approximately 18 months in bottle, the wine was riddled and disgorged à la volée with zero dosage and no sulfur.

Although technically a non-vintage wine—you won't find the vintage on the label—the 2018 Tradition Sparkling Wine is composed mainly of Pinot Noir (30%) and Chardonnay (70%) from the 2018 vintage, blended with 6.5% perpetual cuvée. Grapes come from several vineyards including Keefer Ranch, Alder Springs, Linda Vista and Rorick. It was fermented in barrel and about 20% stainless steel and spent 28 months on the lees before being disgorged without dosage. It has layered, singular aromas of bruised apples, lemon candy, sour cream and flint with honeyed bass tones. The medium-bodied palate is dry with a creamy texture and tangy acidity, offering a compelling interplay of ripe fruit and honey-nut tones. It has a flinty streak and a touch of phenolic texture that draws out its long finish. 820 cases were made.
