Greek sailors from Phocaea established the nearby colony of Massalia (modern-day Marseille) in the sixth century BC, bringing their viticultural savvy to the region and planting what are thought to be Provence's first vineyards. The Romans later made their way here, establishing Cassis as an important fishing and commercial port while further developing the wine trade. Local wines earned an excellent reputation over the centuries, especially a sweet Muscat said to be among the Mediterranean's finest. In 1865, phylloxera struck, effectively destroying Provence's vineyards; when Cassis was replanted in the subsequent years, Muscat was left out in favor of Ugni Blanc, Clairette, and other grapes selected for production of dry whites. In 1936, Cassis gained the distinction of being named among France’s first official AOCs, in the elite company of Tavel and Châteauneuf-du-Pape.\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003cbr\u003eCassis is not only an active port, but what Kermit calls “an earthly paradise.” The vineyards of Clos Sainte Magdeleine are particularly stunning: they jut out on a private cape to meet majestic limestone bluffs, poised spectacularly above the sparkling, azure waters. The domaine also has prized holdings on steep terraces carved into the sensational Cap Canaille, France's highest sea cliff perched 400 meters over the Mediterranean. Only a dozen \u003cspan class=\"MsoHyperlinkFollowed\"\u003evignerons\u003c\/span\u003e today are fortunate enough to produce AOC Cassis (the appellation covers just 215 hectares), and the small quantities available are largely consumed locally with fresh fish—the best way to enjoy them. The Sack-Zafiropulo family has been making wine here for four generations and continues to craft whites of grace and finesse, just as they did when founder Jules Savon won the Gold Medal for the domaine at the World’s Fair in 1900. The domaine bottles both whites and rosés, the latter of which are especially limited. He has also introduced new ideas from concrete egg vinification to experimentation with Vermentino, exploring the immense potential of this striking maritime \u003cspan class=\"MsoHyperlinkFollowed\"\u003eterroir\u003c\/span\u003e with curiosity and precision. Well, that’s now complete: a spacious, chichi space with sofas, a walk-in cool-room to house back vintages and a large table for tasting. That’s not the big news. No, the headline is that in July 2022, Clerget bought Domaine Regis Rossignol-Changarnier and its eight hectares of vine. These were split with fellow winemaker Arnaud Baillot, though as Clerget put the deal together, he essentially got first dibs on which vineyards he wanted to add to his Pommard\/Volnay-focused portfolio. Each ended up with four hectares. Apropos the 2022s, note that Clerget was advising Rossignol-Changarnier’s\u003cspan\u003e \u003c\/span\u003e\u003cem\u003echef de culture\u003c\/em\u003e\u003cspan\u003e \u003c\/span\u003eon how to farm the vines before the acquisition. Hence, it isn’t a case of having zero control of viticulture before the deal went through. The grapes were harvested and sorted manually in the middle of October in small boxes of 20 kg. The grapes were de-stemmed and pressed as soon as they arrived in cellar, and the must went into 15 hl concrete tank for spontaneous alcoholic fermentation. The must was pushed down manual once or twice daily until the end of fermentation. The maceration on the skins lasted till the end of December 2020, when after the racking and the pouring off, the wine was put in exhausted tonneau and barrique. The wine underwent spontaneous malolactic fermentation in the spring and immediately after was racked in early summer 2021 with slight sulphiting. The wine, after the first 12 months of aging in tonneau, has continued to age in concrete tank for the last 8 months until bottling in September 2022, without filtration. No added oenological additive with the exception of sulphur dioxide in minimum quantities.\u003cbr\u003e\u003cbr\u003e\u003cem\u003eA very elegant and refined vintage, which gave rise to a wine in perfect \"Carema style\": a crystalline wine with notable gustatory tension due to a marked acidity and excellent savory, the fruit is very intact and crunchy, the measured and airy body leads to compulsive drinking and fulfilling. Showing a nice cross of primary, secondary and tertiary notes for abundant complexity. The nose was so persistent, with notes of ripe and dried cherry and plum, loamy soil notes, some tar, leather and a speck of balsam, with savory and spice notes near the back. The tertiary aspect really pulled me in, compelling to smell. On the palate, it was med+ in body and tannin that was finessed and for sure mellowing. The med\/med+ acidity was perfectly integrated, lighting up the palate’s flavor profile. The concept here comes from the skin contact, which varies depending on the acidity and the ripeness; in very warm years, they avoid full skin contact because it lowers acidity. Here we're talking 12 hours at 12 degrees Celsius for 70% of the grapes, so it's not at all an \"orange\" wine. In fact, the color is as pale as the Muros Antigos. The difference here is the soils where the grapes grow—in the Quinta da Torre, the soils are alluvial (still granitic) but with a little more clay (8%) and more resistance to drought. It started quite shy, but the wine is more aromatic and floral; it has more volume and is more concentrated, because of the soils and the skin contact. It comes in at 12.5% alcohol, a pH of 3.3 and seven grams of acidity—a little of those factors is what happens with the alluvial soils, but the higher pH is because there's more potassium for the grapes and the acidity is also higher; but it's more because of the temperature, which in the Quinta da Torre, a valley, is lower at night than in the slopes from Melgaço, where the grapes from Muros Antigos come from. 360,000 bottles produced. These were split with fellow winemaker Arnaud Baillot, though as Clerget put the deal together, he essentially got first dibs on which vineyards he wanted to add to his Pommard\/Volnay-focused portfolio. Each ended up with four hectares. Apropos the 2022s, note that Clerget was advising Rossignol-Changarnier’s\u003cspan\u003e \u003c\/span\u003e\u003cem\u003echef de culture\u003c\/em\u003e\u003cspan\u003e \u003c\/span\u003eon how to farm the vines before the acquisition. De Grazia described 2023 as the most difficult vintage he’s experienced on Etna. Spring rains totaling around 400 millimeters triggered a devastating outbreak of downy mildew, cutting yields by up to 70% on the northern slopes. The eastern side was largely spared, which helps explain the strength of Terre Nere’s whites. The wet spring gave way to a hot, drought-stricken summer, leading to thicker skins and uneven ripening, as many vines shut down under hydric stress.
