The new owner, the studied enologist, then computer engineer and co-founder of one of the biggest business consulting companies in the world, Anatole de la Brosse, returned to wine at almost 50 years old and has sold out his production quickly in France yet hasn’t opened up much export yet. He currently converts the former domaine, whose terroirs he believes \"are great\" to organic viticulture, with the assistance of technical consultant Michel Chevré. Also, Nady Foucault, former owner of the iconic Clos Rougeard, is consulting for him. The estate covers 15 hectares in the commune of Parnay, where they are located on the hillside. Rooting in clay-limestone soils, the vines average 35 years of age. About 95% of the vineyard is planted in Cabernet Franc in the Saumur Champigny AOC. The domaine also has a few plots of Chenin, which are used to produce the Saumur Blanc. Heavy investments have been made as well: the soil is now worked to avoid the use of chemicals; a new sorting table makes it possible to select the best fruits and to eliminate all the undesirable elements; a new destemmer scrapes the grapes without damaging them, which improves the quality of the maceration; a new 30-hectoliter pneumatic press gently presses the grapes; gravity is used instead of pumps; and the tanks are thermo-regulated for perfect control. No chemicals are added during the whole process except for small quantities of sulfur dioxide. The vines are planted predominantly on clay-chalk, and without marked terroir differences among the parcels, De la Brosse differentiates his range through maturation. Harvesting is done by hand, with several tries before the berries reach the tank. Indigenous yeasts are used for fermentation. Extraction is very gentle—simply wetting the cap every two days and fermenting cool for 10–15 days. No SO₂ is used, but Bioprotect, a non-saccharomyces yeast added to vineyard buckets, protects against Brettanomyces and other bacteria in the winery. The Closiers cuvée is matured for nine months in barrel. The most recent release, 2023, is a success in a challenging vintage. The purity of the wines of this former judo champion Thibaud Boudignon, is impeccable. His three Savennières - La Vigne Cendrée, Clos de Fremine and Clos de la Hutte - are within spitting distance of each other. Still, each has its own personality: Clos de la Fremine, whose sandy topsoil is delicate and open, whereas Clos de la Hutte, planted on schist, tends to be fuller and more brooding. The theme throughout the range is transparency and harnessed power of the wines, which marks a contrast to bigger, bolder Savennières styles produced elsewhere. In 2021, Boudignon planted a 2.5ha site less than a minute's walk from the other parcels: Devant Le Jeu. He also owns two hectares across the Loire in the Anjou appellation. Boudignon says he's stopping at that. There's a small, modern winery at the site, a few minutes' drive to the south of Savennières, completed in 2016. You'll find tanks and a range of barrels in various shapes and sizes, yet oak is used not to bring flavor but texture. Boudignon has an unusual albeit practical approach in the cellar: conducting the harvest in the vineyard and holding the juice at 3˚C until all the parcels are picked so that all the work in the vineyard is done and he can concentrate solely on making the wines.
