The Soleras of our Very Old Sherries were established towards the end of the 19th Century. Each individually registered bottle of the "Valdespino V.O.S. Collection" represents over 100 years of careful selection by generations of expert oenologists. The result is a Sherry unique in character, intensity and complexity. Grapes come from our vineyards in the famous Pago Carrascal with their chalky soils, and the Oloroso and Pedro Ximénez wines are aged in solera before being judiciously blended together and aged in another solera dating from 1842, which has developed great complexity. The wine is bottled with an average age of over 25 years. It is dark mahogany in colour with an aromatic nose of nuts, dates, raisins, black chocolate and background hints of liquorice. On the palate it is rich, smooth and full bodied with an attractive sweetness which does not obscure the wine?s old Oloroso backbone.
It is a mix of dry Oloroso (Palomino grapes from the Carrascal and Macharnudo areas) with 8-10% sweet, very old Pedro Ximenez. This results in a sugar contents of around 45-50g/l, which means the wine is off-dry rather than thoroughly sweet.
Valdespino Solera 1842 is a V.O.S. wine – it’s over 20 years of age, and more importantly: the wine spends almost half of its time as a blend. This makes the end result much more integrated and ‘naturally sweet’ than when the blend is brought together right before bottling.
